    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our planet and other people?

    Eating meat is ingrained in our western culture. While it's what I was brought up on, I enjoy cooking, so personally I find it fun to try new recipes that don't revolve around meat and are balanced with other foods that make me feel healthier and are better for the planet, too.

    Absolutely. During this time I have been more able to appreciate the changing of the seasons from winter to spring from bird songs to buds on trees. Watching those changes unfold has been truly beautiful and inspiring.

    Maintaining relationships is important now more than ever. Even though we can't be together physically, it makes me so happy to hear my family and friends over the phone or see them on the computer. It is definitely a highlight of the day, even if there isn't much new news to share.

    Tonight we made fajita bowls with rice, beans, and veggies.  It was easy to throw together and used some of the staples we usually keep on hand.

    Today I did a Zoom cardio class with my parents - a fun way to connect AND stay active while quarantined.

    Yesterday we got out our bikes for the first time this year and enjoyed some fresh air. It was fun checking out new places around our neighborhood that are hard to get to only by walking.

    Today's lunch - roasted red pepper soup, biscuit, and tomato & bean salad with arugula. The soup has chicken broth, and we added a little goat cheese on top, but could easily make some swaps when we have different ingredients more readily available. Yesterday for lunch we had veggie burrito bowls. Enjoying these veggie inspired meals - yum!

    Looking forward to the Ecochallenge! I just selected my actions - some that I plan to do on my own and some that my husband and I selected together. It's always more fun and easier to commit to actions when you have support from others :) Have you selected your actions yet?
