    Here are some recipes I made this week. Really enjoyed the challenge!

    Blueberry oatmeal – the orange zest is a nice bright twist to an oatmeal classic! https://cooking.nytimes.com/recipes/1013019-blueberry-oatmeal

    Smashed Chickpea salad – great spread for wasa crackers or toast with sliced tomato https://www.allrecipes.com/recipe/16715/vegetarian-chickpea-sandwich-filling/

    Baked Ziti – this is a family favorite, https://www.food.com/recipe/americas-test-kitchen-skillet-baked-ziti-314560 - I think you could easily swap dairy for non-dairy alternatives

    Pesto – I got a TON of parsley and spinach in my farm box from Hungry Harvest so decided to try and make pesto with these ingredients instead of the typical basil – I didn’t have quite all of these ingredients, but based it on this recipe: https://www.girlgonegourmet.com/spinach-parsley-pesto/

    Made bbq caulflower bites for lunch! Here's the recipe (they're super tasty and easy too!)
    • Preheat oven to 450 F.
    • Wash and cut 1 large or 2 small cauliflower heads into similar size chunks, set aside.
    • Whisk dry ingredients in a bowl: 3/4 c. flour, 2 tsp onion powder, 2 tsp garlic powers, 1 tsp paprika, 1/2 tsp salt, cracked pepper.
    • Add 1 cup unsweetened / plain non-dairy milk of choice to dry ingredients and stir to combine ((should be pancake batter consistency).
    • Dunk cauliflower chunks into batter then panko breadcrumbs. Place on lightly greased cookie sheet
    • Bake for 20ish minutes. 
    I ate them dipped into BBQ sauce, but they're good plain or if you want them dipped, you can toss them in sauce and cook for another 5 minutes.

    First day of Vedge Pledge!  I'm going vegetarian this week. This morning I made tasty blueberry oatmeal for breakfast. NYTimes recommends adding a little bit of orange zest, and oye did that really make it pop! Bright start to a dreary Monday.

    I'm planning to walk to the office today to water my plants! I feel bad for leaving them without water for so long, but there are too many of them to bring home. I look forward to getting outside for some fresh air!

    I think my PACT results were relatively what I expected, I think we can always do more! I think eating less meat will be something I focus on for the upcoming year.
