I will volunteer 10 hour(s) in my community helping people who are most at need right now, including elderly and immunocompromised people, people without childcare, and people whose jobs have been affected by social distancing measures.
Action Track: Building Resilience
Spend Time Outside
I will replace 90 minute(s) each day typically spent inside (computer time, watching television, etc.) with quality time outside that follows CDC guidelines for preventing disease spread.

I will enjoy 2 meatless meal(s) and/or 0 vegan meal(s) each day of the challenge.

Connect While Social Distancing
I will connect with at least 3 person/people a day through phone call or video chat to support mine and other’s mental and emotional health during this challenging time.

Participant Feed
Reflection, encouragement, and relationship building are all important aspects of getting a new habit to stick.
Share thoughts, encourage others, and reinforce positive new habits on the Feed.
To get started, share “your why.” Why did you join the challenge and choose the actions you did?

REFLECTION QUESTIONFood Learn the Truth About Expiration DatesHow does knowing the difference between use by, sell by, and best by dates empower you to make better decisions?
Penny Klabunde 4/27/2020 8:46 PMFood (and pharmaceutical) waste harm the planet as well as waste money and the efforts to produce these products. Now that I clearly understand the difference between use by, sell by and best by dates, I can make smarter decisions at home about "iffy" items in my cupboards. In my extra time during COVID-19, I have tidied my pantry and moved all items expiring in 2020 to one side to be sure they are used in a timely manner. While shelf stable items are safe after the printed dates, they are more flavorful and appealing before their "deadline". If an item won't get used "in time" I can donate it to a food pantry. Giving it before it "expires" shows respect for the recipient. -
Penny Klabunde 4/26/2020 2:48 PMThanks, Erin, for inviting me to join this challenge! I am so happy to have focused on daily actions that are becoming habits that will continue after the challenge concludes. Next steps for me will include political action. My personal actions certainly matter but large scale change is essential to saving our beautiful planet Earth!-
Erin M 4/26/2020 11:02 PMPenny, thank you for being a huge part of our momentum! And I'm with you 100% - my next steps also include political action. Yes to large scale change! : )

REFLECTION QUESTIONAction Track: Building Resilience Volunteer in my CommunityHow does volunteering enhance your community and/or change your relationship with it?
Penny Klabunde 4/13/2020 3:22 PMI am grateful to be on the board of directors of the Family Nurturing Center, a relief nursery, preschool, parent education, family support and child abuse prevention organization. This time of enforced isolation is particularly challenging for parents recovering from drug abuse, domestic violence and, often still grappling with the abuse they suffered when they were children. Everyone at FNC is working extra hard to assist with basic needs, help parents cope and keep children safe.-
Ana B 4/16/2020 10:40 AMWhat wonderful work you are doing Penny. I have had a few friends asking if I knew of anyone who just needed a hot meal dropped off at their home. I know that doesn't fix any of these problems, but if a gesture of kindness might be helpful, please let me know. I will pass along the message. -
Carmen Proffitt 4/13/2020 4:06 PMWow, amazing work. This time of enforced isolation is really impacting vulnerable populations.

Penny Klabunde 4/09/2020 8:12 PMI am really enjoying this eco challenge! Thanks, Erin, for inviting me to join. The weather today was SO BEAUTIFUL that I spent extra lots of time outdoors. I genuinely wish we were getting more "April Showers" but since we aren't, I am savoring the sunshine. When the clouds return I will post my photo and other things that will add to our team points. I love living in Southern Oregon and want to help keep it beautiful.-
Erin M 4/09/2020 9:05 PMSo wonderful to read this! Thank you Penny!

REFLECTION QUESTIONAction Track: Building Resilience Spend Time OutsideRachel Carson said that we need the beauty and mysteries of the natural world for our spiritual and emotional development. Does that ring true for you? What are the implications for a culture that spends most of its time indoors?
Penny Klabunde 4/01/2020 8:29 PMI grew up always preferring being inside to being outside. I have to battle that inclination nearly every day, but as soon as I get outdoors, I am SO HAPPY to be there! After yard work during the day today, I went on a twilight walk with my dog. The air was cool and so clean after the day's rain. It was lovely! -
REFLECTION QUESTIONFood Weekly Meal PlanningAn average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?
Penny Klabunde 4/01/2020 3:31 PMI think I am pretty careful, but I know that I still waste food due to overly enthusiastic shopping, changes in plans and occasional carelessness. Devoting that money to anything other than waste would be an improvement!!! -
REFLECTION QUESTIONFood Reduce Animal ProductsWhy do people in richer countries eat more meat than people in other places? How does eating more meat affect our planet and other people?
Penny Klabunde 4/01/2020 3:28 PMRicher people can afford more meat than those of lesser means. Eating more meat releases more emissions into our atmosphere and degrades more land/soil. -
REFLECTION QUESTIONAction Track: Building Resilience Connect While Social DistancingHow does connecting with others help your own mental and emotional health? How can it help support others?
Penny Klabunde 4/01/2020 3:25 PMMakes me feel less isolated and hopefully helps them feel less alone.
