While it's what I was brought up on, I enjoy cooking, so personally I find it fun to try new recipes that don't revolve around meat and are balanced with other foods that make me feel healthier and are better for the planet, too. -

Liz Wimmer 4/30/2020 6:56 PMAbsolutely. During this time I have been more able to appreciate the changing of the seasons from winter to spring from bird songs to buds on trees. Watching those changes unfold has been truly beautiful and inspiring. -

Even though we can't be together physically, it makes me so happy to hear my family and friends over the phone or see them on the computer. It is definitely a highlight of the day, even if there isn't much new news to share. -

Liz Wimmer 4/10/2020 12:29 PMToday's lunch - roasted red pepper soup, biscuit, and tomato & bean salad with arugula. The soup has chicken broth, and we added a little goat cheese on top, but could easily make some swaps when we have different ingredients more readily available. Yesterday for lunch we had veggie burrito bowls. Enjoying these veggie inspired meals - yum! -
